Paula Deen announced today that she's been living with type 2 diabetes for the past three years. Apparently she's had some unhealthy eating habits...
In honor of Paula coming out today to defend her fattening, sugar- and butter-filled recipes as "entertainment," I'm posting two of my favorite PD recipes that you should never make. Kidding! Moderation is a good thing - keep that in mind.
This said, here's a link to my gym, Lifetime Fitness. If you join, tell them I sent you (I'll get bonus classes for free!). Eat, cook and live every day just a little bit healthier than you did yesterday. I will too.

Recipe courtesy Paula Deen
Ingredients
- 4 large skinless boneless chicken breasts
- 4 tablespoons butter, melted, plus more for casserole
- Kosher salt and freshly ground black pepper
- 6 ounces (about 8 slices) Swiss cheese
- 1 (10 3/4-ounce) can condensed cream of chicken soup
- 1/4 cup white wine
- 1 cup herb-flavored stuffing mix, crushed
Directions
- Preheat the oven to 350 degrees F.
- Add the chicken to a shallow buttered casserole and season with salt and pepper, to taste. Layer the cheese slices on top.
- In a medium bowl, add the soup and the wine, season with salt and pepper and pour over the cheese. Sprinkle stuffing mix on top and drizzle with melted butter.* Bake for 45 minutes. Remove from the oven and serve.
*Cook's Note: If desired use more butter.
- 4 cups peeled, sliced peaches
- 2 cups sugar, divided
- 1/2 cup water
- 8 tablespoons butter
- 1 1/2 cups self-rising flour
- 1 1/2 cups milk
- Ground cinnamon, optional
Directions
- Preheat oven to 350 degrees F.
- Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.
- Put the butter in a 3-quart baking dish and place in oven to melt.
- Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. Batter will rise to top during baking. Bake for 30 to 45 minutes.
- To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream
